WHY I GOT INTO THE BIZ / WHAT INSPIRES ME:
I have been in the restaurant industry for almost 10 years. What started out as a paycheck, to fund my move to Olympia and my degree at The Evergreen State College, evened into a definite lifestyle. My business partners and I met in different stages of our lives 3-5 years ago and now have plans to open a full service restaurant and commissary kitchen in the late Summer of 2019. Most of my experience in on the floor or behind the bar doing cocktail and beverage development, my other partner is extremely versed in the kitchen and our last partner is currently working towards getting fully certified as a Sommelier. Collectively we have 35 years of restaurant experience between us.
We currently own and operate The Mouse Trap Cheese Bar in Downtown Olympia on Washington St. The opportunity to take ownership of the The Mouse Trap presented itself in the midst of our business plans at the end of 2017 with the help of our mentor and since then we have been working hard to develop an audience and get people really excited now about food, drinks and community space for the restaurant to come.
I draw inspiration from my family, peers, mentors, role models and the many culinary variations of historic cuisines that simply speak for themselves.
